Maple Shishitos (vegan, gluten-free, and plantstrong)

These little darlins just may be my favorite healthy snack EVERRRR. Shishito peppers are delicious, nutrient-dense, low in calories, and high in happiness. They’re also so fun to eat!! I love that you can enjoy a whole HUGE ASS bowl full, and still feel like all you’ve done is eat your veggies.

They also require SO little to make them taste great! I like to prepare them in the air fryer typically, so you can do that instead of baking them if you prefer. (Since this recipe is from my newest cookbook Healthy Vegan, Happy Body, and not my air fryer cookbook, this recipe calls for baking in an oven. Not everyone has an air fryer, but if you do, just pop them in the basket and airfry at 400 - they’ll be done in about half the time of the oven instructions!).
