Golden Tofu with Coconut Lime Quinoa (vegan and gluten free)

I am so excited to share this recipe with you today! It’s one of my favorites from my newest cookbook, Healthy Vegan, Happy Body, and I am obsessed with it. I love the balance of the flavors - you’ve got the strongly spiced golden tofu, paired with the creamy, tangy coconut lime quinoa. Really, babies, you gotta try this one!!

It’s also a good example of the healthy (yet delicious!) recipes from Healthy Vegan, Happy Body (which can be pre-ordered HERE), and I can’t wait to hear what you think of the other recipes once you try them!
