Raw Chocolate Mint Tarts (vegan and glutenfree)

As the release of my newest book, Healthy Vegan, Happy Body, draws closer, I will be sharing some of my favorite new recipes with you!

These little tarts were created while my cousin/dear friend Stacia was visiting, and we sort of freaked out at how delicious they turned out! I’ve been soooo looking forward to sharing the recipe with you, because I know you’ll love them too! They’re a raw dessert, which makes them extra nutritious as well as sublimely delicious. Be sure to let me know what you think once you whip up a batch! :)

They’re also a great example of why I’m so excited about this new book - it combines ultra-healthy plant-strong ingredients with phenomenal taste, and the recipes are easy peasy to make too! You can grab your copy HERE.

NOTE: If you have a high powered blender (such as a Vitamix or Blendtec), no need to soak those cashews! Just omit that extra step and toss them right in.
