Chocolate Mint Energy Cookies (revised!)

This is a recipe from my 3rd cookbook, Radiance 4 Life, and it’’s been one of my go-to favorites for the last decade. I love energy cookies for so many reasons!! First of all, they give you that “cookie fix” all while nourishing your body waaaaay more than your average cookie. Plus, they’ve saved me many times while I’ve been out and about (or traveling) when I’ve needed some healthy calories to keep me going! This version was recently updated when I decided to try them with a little less fat (substituting oats for the cashews from the original recipe). I discovered they’re 100% as delicious, and offer even more of a variety of nutrients! I hope you love these as much as I do. :)

▪ 1 cup EACH: raw almonds and raisins
▪ ½ cup rolled oats
▪ 1/4 cup plus 2 tablespoons raw cacao powder
▪ 2 tablespoons raw agave nectar
▪ 4 teaspoons vanilla
▪ 2 teaspoons mint extract
▪ 1/4 teaspoon sea salt

Blend all of the ingredients in a food processor until the mixture is in fine crumbs and very sticky. Remove 1-tablespoon bits of the mixture and roll into balls. These will store, refrigerated in an airtight container, for a month or more.
