Air-Fried Spring Rolls (from The Essential Vegan Air Fryer Cookbook)

As promised, I wanted to share a few more recipes with you before my next book is released on June 18th! These easy peasy spring rolls are a favorite of mine - in fact, I just had two with my lunch today! Because they’re such a go-to item at our house, I like to make up a big batch of the filling and keep it on hand (it lasts about a week). Then, it’s easy to roll up a few spring rolls to air-fry at a moment’s notice!

You can vary the veggies in this (my daughter prefers them without the shiitake mushrooms, but I say they’re the best part!) and serve plain, or with an Asian dipping sauce. When I’m feelin’ lazy (which is often), I serve these with some plain old chili garlic sauce, but that’s probably a bit too spicy for most people! Some less intense sauce ideas are: a sweet chili sauce, sweet and sour sauce, peanut sauce, or just a homemade chili-tamari-garlic-lime sauce.
