Roasted Shishito Peppers with Lime

This is a recipe from my cookbook, The Essential Vegan Air Fryer Cookbook: 75 Whole Food Recipes to Fry, Bake, and Roast. I wanted to share it with you today, because I really feel like it's practically the best snack in the world!!! :D

Why, you ask??

Well, a few reasons:
1. It's basically just vegetables (vitamin-rich shishito peppers, to be exact) so it's low in calories, high in fiber, and nutrient-dense.
2. You can eat a HUGE BOWL of these and still feel like a health guru!
3. They're sooo easy to make!
4. They're weirdly fun to eat.
5. They have an enticing, delicious flavor.

You can find shishito peppers in most grocery stores, Trader Joe’s, and Sprouts, but if you’re lucky to see them at a local farmer’s market, get a big bag because they’ll be the BEST!! Although this recipe calls for making them in the air fryer, you can also bake them (it’ll take a bit longer, so just keep an eye on them - spread the peppers out on a baking sheet and cook at 400 F.). However, if you’ve got an air fryer, this method is quick, easy, and makes for a perfect batch of these lil’ goodies!
