Chocolate Peanut Butter Bliss Cookies (sugar-free!)

Yes, BLISS.

These cookies make me soo happy! Here are some of the reasons why:

1. They’re sugar-free (I don’t count maple syrup as sugar, since it’s so low-glycemic and nutrient-rich).
2. They take like five minutes to make!
3. You don’t have to bake them - again, SO easy!
4. PEANUT BUTTER AND CHOCOLATE HELLO
5. Everyone loves them!
6. I made these for a cooking class once, and one of the men who attended sent me a photo a week later - he’d shaped these into hearts for his girlfriend (can you even?!)

So, yes. These are an absolute favorite around here! I hope you’ll dig em too. :)


Chocolate Peanut Butter Bliss Cookies

1/2 cup stevia-sweetened chocolate chips (I use Lily’s brand)
1/4 cup smooth peanut butter
1/4 cup maple syrup
1 teaspoon vanilla
Sea salt, to taste
1 cup rolled oats

1. In a small pan set to the lowest possible heat, melt the chocolate chips and peanut butter, stirring constantly. As soon as the chocolate chips are melted (or almost melted), remove from heat. It’s very important not to overheat the chocolate, or it will seize up.

2. Stir in the maple syrup, vanilla, and salt. Mix well. Stir in the oats until thoroughly combined.

3. Drop onto waxed paper or a plate to form your cookies (they’ll be about one-inch in size). Chill for about 20 minutes in the fridge, or until firm. Enjoy! (Leftovers will keep, stored in an airtight container in the fridge, for at least a week)

Makes 16 cookies (serves 8); GF (if using gluten-free oats)/SF (if using soy-free chocolate chips)/Blue (according to the health guidelines in my cookbooks and coaching programs)
