Chocolate Orange Zest Superfood Cookies

Why oh why do I love superfood cookies so very much?! Raw Cinnamon Rolls, Dark Chocolate Mint Energy Cookies, Peanut Butter Oat Cookies, and now these. IN LOVE. But why my unbridled adoration for these creations? The answer is quite simple—they satisfy the sweet tooth while truly nourishing the body. They also provide a clean burst of energy that’s perfect for when you’re on the go. Win-win-win!

Recipe from FOOD LOVE (you can find other superfood cookie recipes in my cookbooks and also here)

1 ½ cups raw walnuts
1 cup (packed) raisins
¼ cup raw cacao powder
1 tablespoon EACH: agave nectar and minced orange zest (fully packed into the tablespoon)
1 teaspoon vanilla
¼ teaspoon sea salt
Optional: ¼ cup raw cacao nibs

1. In a food processor, combine everything except for the cacao nibs. Blend until very, very sticky. Lastly, add the nibs (if using) and blend for a few seconds, just enough to mix them in.

2. Remove in one-tablespoon bits. With your hands, roll into small balls. Gently place in an airtight container and refrigerate (they will keep for at least ten days this way).

Makes about 18 cookies; GF/SF/Blue/R/F (according to the health guidelines in my cookbooks and coaching programs)
