For some reason, this oh-so-simple dessert has always seemed magical to me - something to do with the way the tang of the raspberries meets the maple syrup is my best guess. Whatever the reason, I hope you love this light, refreshing dessert as much as I do!

NOTE: If you don't have a high-speed blender, there will be some texture from the raspberry seeds. If you desire a smoother texture (and have a regular ol' blender), try the following: Process the raspberries first, then run them through a mesh strainer. Then, process the seedless raspberry mush with the other ingredients.


INGREDIENTS: 
• One 12.3 oz. container of silken tofu, firm or extra firm
• ½ cup pure maple syrup
• 2 cups frozen raspberries (no need to thaw them)
• 1 teaspoon vanilla extract
• ⅛ teaspoon sea salt

Blend all ingredients in a blender or food processor (see note above if you don't have a high-speed blender). It’s just that simple! If desired top with a few fresh raspberries and a mint leaf. Enjoy!

Serves 6/GF/Blue (according to the health guidelines in my cookbooks and coaching programs)

Final thoughts: In my coaching work, I constantly stress the importance of enJOYing food! We cannot have lasting progress if we constantly feel deprived. Thus, desserts are an important aspect of long-term health, in my experience! If you're eating foods that satisfy you, you'll be much less likely to "go to the dark place" right? So, enjoy a little of the sweet stuff every day if you like - especially when it's as light and nutritious as this recipe! ;-) xo
